 Killer Mexican Corn

 

Killer Mexican Corn 

 

Ingredients

 

    4 corn on the cobs, in husks
    1 red chile, deseeded and finely chopped
    7 ounces hard cheese, such as Manchego
    1/2 cup unsalted butter
    2 limes cut into wedges

 

 

Preparation

 


    You'll need to have one side of the grill hotter than the other, so stack your coals higher on one side.
    While you are prepping the grill, soak the corn in a bowl of water
    Put the corn on the cooler side of the grill, cover with the lid, and cook for 20 minutes
    Remove the husks and discard. Place the corn on the hotter side of the grill, turning until all of the kernels are lightly charred, about 5-10 minutes.
    Scatter your chiles and grated cheese on a large plate or cutting board.
    Roll the corn in the butter and then in the cheese and chiles until evenly coated.
    Serve with lime wedge for squeezing over.

Welcome back to school! 

 

With the threat of Hurricane Irene safely past us, it is time again to focus on the new school year.

 

An important part of academic success is being healthy and again this year, in partnership with New Hanover County Schools, WHAT is providing medical and mental health services at Ashley or New Hanover High Schools. At the wellness centers teens can get sports physicals, make sure they are up to date on their immunizations, or talk to one of our counselors for tips on dealing with the stress of back to school. For teens feeling the pressure of back to school, here are some tips for teens dealing with stress.      

 

If your school doesn't have a wellness center, teens can access the same services at our main facility on Oleander Drive, which is open late to provide after school access. Remember, Wilmington Health Access for Teens is the only healthcare provider in southeastern North Carolina that specializes in teens!  

 

Visit us today at any of our centers and see why WHAT is such a special place for the teens we serve.

September is National Childhood Obesity Awareness Month. WHAT works to prevent teenage obesity through its Energize program which teaches teens about the importance of healthy eating, regular exercise and body image awareness.    

 

With WHAT's Registered Dietician, Kerrie Amicone, teens learn how to cook healthy foods that taste great.

Participants also have the opportunity to experience fun physical activities like Zumba, yoga and walking.   

 

This past year, Energize held weekly after school meetings at Ashley High School and made several visits to the WIRE youth center and UNCW's Junior Seahawk Academy
